Sourdough Discard Crackers


Start to finish, these crackers take about a half an hour. You may never purchase commercial crackers again.


Ingredients:

  • 200 grams sourdough discard (cool or room temperature)

  • 28 grams butter, melted

  • 4-5 grams herbs - Italian, Greek, your mix

  • 5 grams RealSalt or sea or kosher salt


Method:

  • Preheat oven to 350

  • Mix together the ingredients above

  • Line a cookie sheet with parchment paper then spread the dough very thinly with an offset spatula.

  • Bake 10 minutes then take out and score.

  • Bake another 15 to 20 minutes - longer if necessary.

  • Watch closely and remove outer crackers as they darken.


Notes:

  • Try 85-90 grams of grated Italian cheese - optional

  • Substitute any herbs or cheese you like.

  • Add seeds or anything bagel seasoning.
